    Don't know any live mathematicians to be honest.

    What about historical mathematicians?

    Tao, Wiles and Perelman immediately spring to mind. The question is a bit loaded though, for mathematical finance Merton, Dupire and Dalbean and Schachermayer are all foundational and important mathematicians but would not be winning fields medals any time soon (ignoring the age limit that is)
    As is often the case with technical subjects we are presented with an unfortunate choice: an explanation that is accurate but incomprehensible, or comprehensible but wrong.

    You will probably need a practicing mathematician to answer that. Modern mathematics is so out there you pretty much need to be within a field to have any clue whats going on.

    The question is "most influential".

    "Greatest" might include Perelman or Weil. Most influential might be Myron Scholes and others who have laid the groundwork for computational finance and trading.
