Jeremy says: "Erwin is lying."
Erwin says: "Peter is lying."
Peter says: "Jeremy and Erwin both are lying."

Depends on their profession, whichever of them work for any government i would say are the liars lol.

erwin is telling the truth lol, because everyone is blaming erwin

you're assuming that the statement "I'm lying" is the opposite of "I'm telling the truth", so in this 1-dimensional definition of a lie the statement "I'm lying" is self-contradictory

however, everyone knows that there are other ways of lying, like mixing truth and untruth so that it becomes hard to tell which is which
or misleading by not telling the whole truth - why else are you told in court to "tell the truth, the whole truth and nothing but the truth" ? because you could still lie by telling "the truth and nothing but the truth" and leave some relevant bits of evidence out

a good quote from Asimov's Foundation's Edge says it all :

"The closer to the truth, the better the lie, and the truth itself, when it can be used, is the best lie."

so if you say "I'm lying" you could at the same time use varying degrees of truth mixed with either untruth or deception

Peter lying=>Erwin and Jeremy telling the truth=>Erwin lying=>Peter telling the truth.

Jeremy lying=>Erwin telling the truth=>Peter lying=>Erwin and Jeremy telling the truth=>Jeremy telling the truth.

Erwin lying=>Peter telling the truth=>Jeremy and Erwin lying=>Jeremy lying=>Erwin telling the truth.

All three of them are telling the truth.

you did a logic mistake. if peter is lying, it does not mean that jeremy and erwin are telling the truth because it is an and-connection. so, peter is just lying if jeremy OR erwin are lying...
