Hi there, your project sounds really interesting, here are a few ideas for you:
1.) DNA Double helix or human genome diagram,
2.) Perhaps even some such as this DNA segment as artwork:

3.) Plenty of diagrams depicting evolution, I quite like this one:

8.) Structure of an Eye.

There are also sites which provide "a thousand digits of pi" as a printable streamer - one version of which I used as a border around part of our old tuition centre.
If you do a display and you want to frame it somehow, that would be the way to go. Or you could use nicely printed versions of various symbols to fill gaps in your display.
