What subatomic particles have been confirmed? Protons, electrons, neutrons, photons, quarks are all I know of. Are there any else?

i'm not sure i'd really consider photons 'subatomic' particles. anyways... this page has a lot of stuff on it about subatomic particles, so hopefully it'll provide you with a good idea of what's out there...

Well the question that always clutters me is that how scientist find out these so small subatomic partcals. Do they obseve them or just through experimentation..

They are observed BY experimentation using article acelerators which smash atoms together. They use technique to observe all the bits which come out.

They don't 'see the bits that come out' they observe the effects, from the 1970's till quite recent this was done in a 'bubble chamber' - google it and I am sure it will point you to the answers to your main question.
