In what context? Do you mean when you eat vegetables? Or in a lab for analysis?
I think they are generally fat/oil soluble, if that helps.
in a lab for analysis. More towards how they are used to create "vitamins". vitamin C pills, omega 3 etc. I mean do they boil for hours or something how do you refine vitamin c from a carrot?
Can't really help much. Not an area I know a lot about, but I thought vitamin A was the only vitamin derived from a carotenoid (beta carotene, specifically). Vitamin C is ascorbic acid, not a carotenoid. Omega 3 are a class of fatty acids, again nothing to do with carotenoids.

What about it? Yes, it is carotenoid but not related to any vitamins, as far as I know.
just part of one of the vitamin supplements hence the question about how cartenoids are extracted and find their way into pills. Ascorbic acid, omega 3 refinement etc apparently ascorbic acid is dervied from a sugar (ascorbic di-ketone) http://en.m.wikipedia.org/wiki/Ketone#section_3 fascinating figuring out how stuff works

You probably need someone with experience of industrial chemistry.
The starting point for ascorbic acid synthesis is glucose ... but it is a pretty complicated process involving several stages.
