    Hello everybody,
    I am writing a 4000 word biochemistry essay on the effects of pH when amylase is reacted with corn starch. I'm supposed to make a real-world connection with my lab, so I was wondering if anyone had any ideas.

    Hello,

    You can try doing a Sci-Finder search if you have access to this at your university library. Typically any graduate student in biochem, bio, or chem can help you figure out how to do this if you don't already know, perhaps a TA? If you're in high school accessing Sci-Finder will be problematic, so in that case I would suggest a google scholar...

    There you can find articles on things like:
    - Novel scientific research that utilizes amylase in acidic or basic conditions (giving you information about amylase activity under those conditions) and you could talk about why those things are good or bad.

    - You can look at examples of this reaction in plant life etc..

    For example,

    Starch and glucose oligosaccharides protect saliva... [Am J Physiol. 1988] - PubMed result

    here is an article (that you will need sci-finder to read) that gives you an idea of how these basic reactions can be used to study more advanced concepts in research.

    In this case, even if you cannot download it, you can see from the abstract that PH has a significant effect on amylase activity...

    So whatever topic you pick, I'd suggest reading through a scientific paper or two on that subject, and trying to understand the general concepts. The results & Discussions / Conclusions section will tell you what they found and you can use your biochemistry book to look up the terms etc used there and gain a general understanding of what's going on.
