to my understanding, not many researchers think that there is much of a risk of HIV evolving into an airborne, or in other way easily transmitted disease, since it is fairly weak and cannot survive long outside of bodily fluids, and probably doesn't survive long without a host.
the big problem with it's fast mutation is getting around new medial treatments too fast.
Your main fear is going to be that the HIV virus acquires a substantial capsule in which it would sustain itself for longer than usual. Since it is a virus, it still won't need any life-sustaining products; it will only need a sort of armor, which is MUCH easier to acquire/evolve than anything that would serve a more complicated purpose.
