There's some general information on mass spectrometry in 'Principles and techniques of practical biochemistry' - 4th Ed. (1994) by Keith Wilson & John M. Walker. Cambridge University Press
Presumably, there will also be information in any self-respecting molecular biology or biochemistry text.
