Hi ,
We know that we value things that are not easily available and are hard to get. e.g People find lighter hair color more desirable in countries like Japan and Italy where majority of the population has darker hair.

What is the phychology behind it?

Could you narrow the question a bit? Like, do you mean can't have, or hard to get? I guess you don't mean sexual attraction, but please clarify.

There's a saying "the grass is greener on the other side"

I belive it's from the brain's ability to create an equbrilium. You can't get stimuli from the same thing year in, year out, you continually need different kind of stimuli, else you end up in a kind of numbness.
Ie, you can't hear the same song over and over, day in and day out, else you have a obsession, a disorder.

We all have different lvls of these factors, therefore some prefer only exotic things, some partially prefer exotic things, and some are indifferent.

Imo it originates from our primal instinct, to spread genes and avoid inbreed.
